I realize Futo’s license is not really FOSS. Disapppointing, but at least not peopeietary and secret.

Two points to that:

1. Immich is licensed under the AGPL3.0, not the FUTO license.
2. If it’s not FOSS, it’s proprietary, no in between. Even if it’s source available and open to public contributions, it’s still proprietary. As far as proprietary goes, I’d say it’s a good place to be, but proprietary nonetheless.

So, it might not sound like much, but 4gb of ram is plenty enough to do quite a bit with self hosting.

If you want to self host, and use it as an opportunity to learn, I recommend you install Debian, and get your hands dirty. If just want to self host without much of a headache, yunohost seems cool, but I’ve never used it, so I can’t recommend it.
